Baked Eggs for Breakfast

Probably one of the most simplest meals you can make.  What makes it the best?  Fresh eggs.  Not just any fresh eggs – but fresh eggs from a dear friend who has three hens in her backyard in urban Seattle.  Today, she brought me one dozen of these incredible, colorful and buttery fresh eggs.  Buttery.  That is the perfect way to describe the way these eggs tasted.  If you have never had a fresh egg like this before, you are in for a real treat and I encourage you to seek out your local farmer (or friend like mine) to get some.

Set your oven to 350 degrees F.  Simply crack a couple of your eggs into a buttered, oven proof dish.  I topped mine with some thyme and freshly grated Parmigiano-Reggiano cheese.  Bake for about 15 minutes or until the egg whites are firm.  They will still keep cooking a little bit after you take them out of the oven, so keep that in mind.

Don’t forget your buttered toast, “Soldiers.”
